Rice Krispie Wedges

I had a craving for a snack last night and I didn’t have any snack foods. I did, however, find that I had ingredients for a quick Rice Krispie treat. I couldn’t remember the recipe my mom used to make, and I was feeling too lazy to look it up, so I improvised and eyeballed the ingredients and their amounts. Here’s what I did:

  1. Melt about 2 tbsp of butter in a large pot over low heat. It’ll take a while to melt but you don’t want the heat any higher or you risk burning the butter.
  2. Add marshmallows (I think I put in half a bag?) and continue stirring over low heat. The marshmallows will eventually melt into a pool or marshmallowy goodness. If you find your marshmallow mass is sticking to the bottom of the pot, you might need to add more butter.
  3. Pour in 1-2 tsp of pure vanilla extract. It should smell amazing at this point.
  4. Remove from heat. Pour in Rice Krispies a cup at a time and stir to mix with the marshmallows.
  5. Add as much Rice Krispies as you want. The more Rice Krispies to marshmallow ratio, the less sweet/harder your treats will be when cooled. The less Rice Krispies to marshmallow ratio, the more sweet/softer your treats will be when cooled. One way to test is to take a small bite when mixing to determine what taste you prefer. Personally, I prefer more Rice Krispies to marshmallows – it may cool down to be hard, but when you microwave it for 10 seconds before eating, it becomes an ooey gooey treat!
  6. Once you’re content with your mixture, pour it into a pan that’s lined with waxed paper (this will prevent it from sticking to the pan). Take another sheet of waxed paper and use it to press the treat into the pan.
  7. Cool for a few minutes. Then cut and serve!
